How to make a Lahori Chargha at home

Time needed: 2 hours.

We have all seen a beautifully roasted chargha in Lahori streets. It is one of the finest dishes in the Punjab region. A whole chicken is marinated and then fried. It is usually served with Naan and Chatni.

  1. Chicken preparation

    Buy a whole chicken and make some deep cuts on the breast and thigh. This will help the marination to soak up into the chicken.

  2. Add some Masala

    Add 1 tsp of ginger garlic paste.
    1 tsp of vinegar
    1/2 tsp of salt
    Sprinkle all these things directly on the chicken and give it a mix.

  3. Spice it up

    1 packet of tikka masala OR
    1 packet of tandoori masala
    Putt these masala into half kg yogurt , mix it, and pour this mixture on the chicken.

  4. Marination

    Put this marinated chicken in a damp place for at least 4 hours or overnight.

  5. Fry the beauty

    After four hours take your chicken out put it in a pan, pour extra masala on top, drizzle some cooking oil, cover the pan and let it cook for at least 30 minutes on medium head. Turn its side after every 5-7 minutes. Cook it until chicken is tender.

  6. Serve

    Your delicious chargha is ready to serve after 30 minutes. Remove it from the pan. Garnish with some green chilies and fresh coriander . Serve with mint chatni and Enjoy.
